Quick and Easy Smashed Potatoes

IMG_9345 Looking for a quick side dish to make with dinner tonight? Here is one of my go-to recipes that my bestie taught me and it’s so simple!

The Ingredients

  • One bag of multi-colored small potatoes
  • Salt
  • Avocado oil
  • Italian seasoning
  • Garlic salt
  • Black pepper
  • Parmesan cheese

The Directions

  1. Start by boiling a bag of multi colored small potatoes until they are soft in salted water
  2. While the potatoes are boiling, place foil on a cookie sheet and spray with avocado oil (or pam or butter), and preheat the oven to 350 degrees
  3. Once potatoes are soft, drain the water and lay them on the foil
  4. Take a fork and simply smash them all
  5. Spray the now smashed potatoes with the avocado oil for a healthier version (which is what I do), or you can use butter or olive oil
  6. Sprinkle with Italian seasoning (I love the seasoning you make dressing out of, but anything will work)
    Note: If you use regular Italian seasoning and not the salad dressing kind, add a little bit of garlic salt and black pepper
  7. Top with freshly grated Parmesan cheese and pop in the oven
  8. Bake until the potatoes are a nice golden brown on top
